Ingredients:
3 tablespoons olive oil
3 tablespoons balsamic vinegar
2 tablespoons brown sugar
3 ounces goat cheese
1 teaspoon of salt
1 loaf of bread (such as ciabatta)
Sliced asparagus for garnish
Directions:
Preheat oven to 400°.
Heat olive oil in a sauté pan on medium heat, once oil is hot add the onions and cook stirring often until translucent, about 10 minutes.
Add salt and cook for 5-7 minutes on medium heat, adding the salt at this point will help start the caramelization process.
Add the vinegar and sugar and cook for 5 minutes stirring often. Once the onions have turned to a light brown color and are soft in texture take them off the heat.
Slice bread into ½ inch slices, dress with olive oil, place in a baking dish and bake for 15 minutes turning halfway.
Immediately after taking the bread out of the oven add a dollop of goat cheese on each toast and spread.
Top with caramelized onions and garnish.
