2 ½ cup cooked lobster meat, chopped
1/4 cup mayonnaise
2 tablespoons fresh lime juice
2 tablespoons chives, chopped
1 teaspoon paprika
1 tablespoon chopped celery
8 bacon slices
4-5 lettuce leaves
1 tablespoon unsalted butter, melted
2 tablespoons unsalted butter, softened
4 brioche rolls, split
1 tomato, thickly sliced
Salt and freshly ground pepper
In a medium bowl, whisk the mayonnaise with the lime juice, chives, paprika, celery, and melted butter. Season with salt and pepper, mix in the chopped cooked lobster meat. Refrigerate until chilled.
Cook the bacon: in the oven at 400 for 20 minutes, until crispy. Or in a skillet over medium-high heat, until crispy, about 7 minutes.
Preheat a grill pan or skillet. Spread the butter on the cut sides of the rolls.
Place the buns cut sides down over moderate heat until toasted, about 3 minutes. Transfer the rolls to plates.
Place the lettuce on the bottom bun, top with the lobster mix, tomato, and bacon.
